2 large egg whites

½ cup granulated sugar

⅓ cup all-purpose flour

¼ teaspoon salt

¼ teaspoon vanilla extract

¼ teaspoon almond extract (optional)

2 tablespoons unsalted butter, melted

1–2 tablespoons water (as needed)

Small strips of food-safe paper with fortunes
Instructions

Preheat oven to 350°F (175°C). Line a baking sheet with parchment or a silicone baking mat.

In a bowl, whisk egg whites and sugar until frothy.

Add melted butter, vanilla, almond extract, salt, and flour. Stir until smooth. Add water to thin if needed.

Drop 1 tablespoon of batter onto the baking sheet and spread into a 3–4 inch circle. Bake 8–10 minutes or until edges are golden brown.

Remove one cookie at a time, place the paper fortune in the center, fold in half, then bend over a cup edge to shape.

Hold in a muffin tin or small bowl to retain shape as it cools. Repeat with remaining batter.
