Instructions

In a bowl, sift together the flour, matcha powder, and salt.

In another bowl, cream the butter and powdered sugar until light and fluffy.

Mix in vanilla extract if using.

Gradually add dry ingredients into the butter mixture. Mix until a soft dough forms.
Smooth and vibrant green dough, ready to chill -
Shape the dough into a log or flatten for cut-outs, then wrap in plastic wrap.

Chill in the fridge for at least 1 hour.

Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.

Slice or cut dough into desired shapes.

Place cookies on the baking sheet and chill for another 10–15 minutes.

Bake for 12–15 minutes, or until edges are just set. Do not overbake.

Cool on the tray for 5 minutes, then transfer to a wire rack.
