Instructions

Crush graham crackers and chocolate cookies into fine crumbs. Mix with melted butter until evenly combined.

Press the crumb mixture firmly into the bottom of a springform pan. Chill for 20 minutes.

In a large bowl, whip heavy cream to stiff peaks. Set aside.

In another bowl, beat cream cheese and powdered sugar until smooth.

Sift matcha powder into the cream cheese mixture and blend until fully combined.

Gently fold the whipped cream into the matcha mixture until smooth.

Swirl melted dark chocolate lightly into the filling to create a marbled effect.

Pour filling onto the chilled crust and smooth the top with a spatula.

Refrigerate for at least 4 hours, preferably overnight, until firm.

Notes

For a firmer cheesecake, add 1 tsp of gelatin dissolved in 2 tbsp of water into the filling.
