2 large egg whites

1/2 cup granulated sugar

1/2 cup all-purpose flour

1/2 tsp vanilla extract

1/2 tsp almond extract

3 tbsp vegetable oil

3 tsp water

Pinch of salt

Paper fortunes (custom or printed)
Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with a silicone mat or parchment.

In a mixing bowl, whisk egg whites, sugar, vanilla, almond extract, oil, and water until smooth.

Stir in flour and salt to make a smooth batter.

Drop 1 tbsp batter on the sheet and spread into a 3-inch circle.
Spread the batter into 3-inch circles before baking. -
Bake for 7–9 minutes or until the edges are golden brown.

Working quickly, remove one cookie, add a paper fortune to the center.

Fold in half and bend over the edge of a cup to shape.

Place shaped cookie in a muffin tin to cool and set. Repeat with remaining batter.

Work fast once cookies come out of the oven—they harden in seconds.

You can flavor the cookies with citrus zest or food coloring for variations.

For best results, only bake 2–3 cookies at a time.
