  • 1 cup unsalted butter, melted
  • 1 ½ cups granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon instant coffee powder (optional, enhances chocolate flavor)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups all-purpose flour
  • 1 cup chocolate chips or chopped dark chocolate

Method
 

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and line it with parchment paper.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, then stir in vanilla extract and mashed potatoes.
  3. Prepare Dry Ingredients: In a separate bowl, sift together the cocoa powder, instant coffee, baking powder, salt, and flour.
  4. Combine & Fold in Chocolate Chips: Slowly add dry ingredients to the wet mixture, stirring gently until just combined. Fold in chocolate chips.
  5. Bake the Brownies: Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
