Ingredients
  

  • Wet Ingredients
  • 2 large ripe bananas, mashed
  • ½ cup coconut oil, melted (or vegan butter)
  • ¾ cup coconut sugar (or brown sugar)
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • Dry Ingredients
  • 1 ½ cups all-purpose flour (or oat flour for gluten-free)
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • Add-Ins
  • ½ cup chopped walnuts (or pecans)
  • ½ cup vegan chocolate chips (optional)

Instructions
 

  • Step 1: Preheat the Oven & Prepare the Pan
    Preheat oven to 350°F (175°C).
    Line an 8x8-inch baking pan with parchment paper or lightly grease it with coconut oil.
  • Step 2: Mix Wet Ingredients
    In a large bowl, mash the bananas until smooth.
    Add coconut oil, coconut sugar, maple syrup, and vanilla extract. Mix well until combined.
  • Step 3: Combine Dry Ingredients
    In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • Step 4: Mix Wet & Dry Ingredients
    Gradually fold the dry ingredients into the wet mixture using a spatula. Do not overmix.
  • Step 5: Add Nuts & Chocolate Chips
    Gently fold in the chopped walnuts and vegan chocolate chips (if using).
  • Step 6: Bake the Blondies
    Pour the batter into the prepared baking pan and spread evenly.
    Bake for 25-30 minutes, or until the edges are golden brown and the center
  • Step 7: Cool & Slice
    Let the blondies cool for 10-15 minutes before slicing.
    Cut into 12 squares and enjoy!

Notes

Storage: Keep in an airtight container at room temperature for up to 3 days, refrigerate for 7 days, or freeze for up to 3 months.

Gluten-Free Option: Replace all-purpose flour with oat flour or a gluten-free flour blend.
